Whoopie Pies

This sinfully simple and unbelievably DELICIOUS recipe is another submission from my friend Tracie. When I opened her email, my jaw positively dropped. HOMEMADE WHOOPIE PIES!! OH MY GOOODNESSSS!! You see, my daughters are not just whoopie pie fans, they are WHOOPIE PIE FANATICS. We frequently buy them from an Amish stand at a local farmer’s market. At $1 buck a piece, they’re not exactly a financial burden, BUT the prospect of making our OWN for (almost) FREE?! WELL. My cheapness and love of baking could not be more fulfilled. And neither could the girls. These are by far the BEST whoopie pies any of us has tasted. A true Christmas gift!

Elfin Shortbread Bites

Today’s tiny bite-size cookies are another find from Simply Homemade Food Gifts. AND once again I’ve taken the ball and run with it. The recipe suggests serving them plain - and as such they are yummy. BUT dipped in white chocolate - ooh la la! Or in this case, FAA LA LA! Yields 160 tiny cookies.

Almond Butter Crunch

I found a FABULOUS book at the library called Simply Homemade Food Gifts. It covers all of the big holidays, from Valentine’s Day to Birthdays, and beyond - and BOY does it showcase some superlative ideas for Christmas. I love these kinds of books! Not only are they great for those who want step-by-step instructions on recreating masterpieces, but they also provide inspiration for jump-starting your own creativity. Today’s scrumptious candy is a little bit of each. I took a recipe from the book, which I provide below. But for my own gift-giving, I decided to take it up a notch, enrobing the candy in two kinds of chocolate for an extra-decadent affair. Either way, this candy is - in my humble opinion - one of the best I’ve ever had. If you like toffee and almonds, you are going to LOVE THIS. And just to sweeten the pot, this is one of the simplest recipes EVER. So no excuses. Go get cooking! Yields 3/4 pound candy.
