Momma Gerber’s Chocolate Chip Applesauce Cake

This dense, ultra moist & completely SALT FREE cake is absolutely delicious, almost like an applesauce brownie. Like so many cherished recipes, this one comes courtesy of friends. Huge thanks to Tami for sharing it (and to Tony for tracking it down)!

Yields 32 servings.

SODIUM CONTENT: 5 mg per serving

INGREDIENTS

1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
2 c. unsweetened applesauce
2 c. all-purpose flour
1 T. Ener-G sodium-free baking soda (available online at healthyheartmarket.com)
1 t. ground cinnamon
2 T. unsweetened cocoa
1/2 c. semisweet chocolate chips
2 T. brown sugar

DIRECTIONS

Preheat oven to 350 degrees. Lightly grease a 9 x 13-inch baking pan and set aside.

In a mixing bowl, cream together the sugar, oil and eggs. Add the applesauce and stir to combine. Gradually add in the flour, baking soda, cinnamon and cocoa, stirring just until combined. Pour batter into the prepared pan. Sprinkle the chocolate chips and brown sugar over batter. Place on middle rack in oven and bake about 45 minutes, until tester inserted into the middle of the cake comes clean. Remove from oven and place pan on wire rack to cool. Cut into squares and serve.
