The perfect cooler for a hot day. Pineapple whipped to perfection, complete with fluffy top and slushy fruit-dotted middle.
Yields four 8-oz. servings.
SODIUM CONTENT: scant trace per serving
3 c. ice (about 15 cubes)
2 c. diced pineapple
1 c. pineapple juice
1 T. sugar
Place ice into a blender or food processor and process until all of the ice has been shaved into tiny bits. Add the fresh pineapple with a half cup of the juice and puree. Add remaining juice and sugar and blend well. Serve immediately.
