Whether you’re blessed with a home garden or just generous friends & neighbors, now is the time when our collective thoughts turn to that most prodigious of plant producers: ZUCCHINI! I love zukes. Yummy, versatile and under 20 mg sodium for even the grandest of specimens, zucchini is our friend. But when you’re inundated with the stuff, what do you do with it? Here are some low-sodium answers!








Brownies?! I thought black bean brownies were insane, but at least beans are the right COLOR. I’d love to try, those, though, if I could use almond meal instead of flour to cut the carbs; I’m all about hiding my vegetables.
You know, I’ve yet to try Black Bean Brownies, though I’ve read Happy Herbivore’s recipe is pretty to-die-for. These were good, and – as you can imagine w/ all that zucchini, very, very moist. Certainly not the brownies my kids beg me for, but then again not many kids pick veggies over choc chips. (and not many adults, truth be told.. though I do love my veggies!)
PS: I have a stack of other zucchini recipes I’m testing out over the next few days, including 2 for zucchini cookies.. my curiosity is definitely piqued. Keep you posted.

ohhh, I love zucchini bread! Cooks Illustrated did a really interesting article on zucchini bread this month, though they insisted that you make it with butter which sort of negates the entire purpose of making bread out of vegetables.
I also love a double-chocolate zucchini brownie recipe I tried out last week from A Dash of Sass. It tastes healthy with a kick of chocolate at the end.

just like you, i like zucchinis too. i use them in pastas and salads but now, i am very eager to try your zucchini brownies. that’s new for me and sounds so exciting!

My zucchini plant isn’t doing very well (and my squash totally died) but I do have 1 small zucchini that is hold on! I will have to hit the famer’s market to try some of these recipes! Yum!

I adore zucchini… but after last years utter failure I didn’t plant any this year. My local markets are swimming with them though and I’m enjoyed them all! Love your round up… nicely done!
Prodigious indeed. We ate so much last year, we overdosed. But ready for some now….the flowers are the best!
