Chocolate Peanut Butter Fudge

Welcome to The Daily Dish 2nd Annual Holiday Bake-Off!

This year’s first prize-winning recipe comes from Tracie W., a Floridian with a passion for FUDGE. Having won the 2008 Bake-Off with her Old Fashioned Peanut Butter Fudge recipe, she’s back to wow us with another. Tracie writes: If you really love old fashioned fudge, but find it hard to make, this recipe is for you. It couldn’t be simpler, and the candy tastes like chocolate peanut butter fudge without all the work. Here’s how you can make a batch in less than 10 minutes.

Whether given as gifts or offered to guests, these scrumptious salt free fudgies will leave you & yours clamoring for more. Easy to make and even easier to eat, each candy has a dry, flaky texture – akin to the Cadbury Flake for those familiar with it. My family and I loved the recipe just as is, but for a truly decadent treat, try enrobing each piece of fudge in white, dark or milk chocolate. Oh my.

Yields 3 dozen candies.

SODIUM CONTENT: 4 mg per candy

INGREDIENTS:

2 c. sugar
1/2 c. (1 stick) unsalted butter
1/2 c. baking cocoa
1/2 c. milk
2/3 c. unsalted peanut butter (smooth or crunchy)

DIRECTIONS:

Mix sugar, butter, cocoa and milk in saucepan. Bring to a boil quickly on the stove top, on high heat, stirring constantly.

Once boiling, reduce heat to medium and boil 6 minutes longer, stirring occasionally.

Remove from heat and beat in peanut butter.

Let sit for five minutes; meanwhile put parchment paper or aluminum foil sheets on counter.

Drop spoonfuls of the mixture in dollops on the parchment or aluminum. (For this step I used a tiny ice cream scoop & it worked wonders!)

Let harden and cool. Store in airtight container.
