Ground Turkey Sloppy Joes

The quintessential kid pleasing sandwich, but better! While searching for a new way to use some ground turkey, I came across an unusual recipe for Sweet & Sour Chili in Better Homes and Gardens Low-Salt Cooking. After looking at the ingredients, I decided to try altering the recipe sightly to try making some killer sloppy joes – something I haven’t had since being placed on this infernal low sodium diet. I couldn’t be happier with the results! Tangy, sweet and slightly sour, these sloppy joes are every bit as good as the salty ones I used to eat. Sure to become a new found favorite for you too. ENJOY!!

Serves 4.



SODIUM CONTENT: 143.3 mg per serving

INGREDIENTS

1 lb. lean ground turkey
1 medium onion, chopped
3 cloves garlic, minced
1 medium red bell pepper, cored, seeded and chopped
1 medium tomato, chopped
1 8-oz. can no-salt-added tomato sauce
1 6-oz. can no-salt-added tomato paste
1/4 c. apple cider vinegar
2 T. sugar
1 t. dried oregano
1/2 t. ground cumin

DIRECTIONS

Place the ground turkey, onion and garlic in a saute pan. Brown meat over medium-high heat. Add remaining ingredients and stir to combine. Cook for 3 minutes, stirring, then reduce heat to medium-low and simmer 25 minutes, stirring occasionally. Remove from heat and serve on toasted rolls.
