Pork Loin with Potatoes & Apples

Oooh! Can I tell you how much I am loving my slow cooker?! Not only does it do all the work for me, but cleanup is a breeze and it makes these tougher cuts of meat soooo succulent and, well – I won’t torture you any longer. Today’s dish is a flavorful low sodium pork loin in ONE simple step. Add everything to the pot, place on low and 8 hours later you’ll have a dinner worthy of company. We spooned ours over steamed basmati rice and it was ample enough for a second meal. Recipe courtesy of Kitchen Basics Healthy Cooking with Stock.

Serves 8.

SODIUM CONTENT: 251 mg per serving

INGREDIENTS

2 onions, peeled and sliced
2 celery stalks, sliced into 1-inch pieces
3 apples, cored and cut into 8 wedges
6 small red skinned potatoes, quartered
1 T. dried thyme
freshly ground black pepper to taste
2 lbs. lean pork loin
2 c. Kitchen Basics Unsalted Chicken Stock

DIRECTIONS

Add onions, celery, apples and potatoes to slow cooker. Place the pork loin into the cooker. Sprinkle with the thyme and season with freshly ground black pepper to taste, then pour stock over top.

Cover and cook on low 7-8 hours or until pork is fork-tender.

Serve over fragrant rice, or partner with a loaf of bread for dipping.
