Vegetarian Holiday Loaf

Ingredients:

2 T. unsalted butter or olive oil
1 large onion, chopped
1 c. old fashioned rolled oats, uncooked
1/2 c. unsalted bread crumbs
1 c. finely chopped cashews
1/2 c. finely chopped pecans
1/2 c. milk
3 eggs, beaten slightly
1 1/2 c. shredded Low Sodium Swiss cheese
freshly ground black pepper to taste

Directions:

Preheat oven to 400 degrees.

Melt butter in a large pan. Add onion and saute until limp. Stir in remaining ingredients until mixture is thoroughly blended. Pack mixture into a well-buttered shallow 1-quart casserole.

Bake for 50 minutes or until well browned.
