The “shortcake” is baked whole rather than divided into individual biscuits, layered with apples and then topped with an irresistibly sweet and sticky combination of brown sugar and homemade apple cider syrup. APPLE WEEK Brekkie Time! I threw this recipe together yesterday and wow.. SO GOOD. The combination of tastes and textures seems tailored made for fall. The warmth and softness of the eggs, the melty tang of the Swiss, the play of apple off shallot and the sage – don’t forget the sage! That woodsy scent draws everything together. Even though it dropped below freezing last night, our sage plant seems to be holding its own. Thank goodness. With all those soon-to-be-laid fresh eggs, I’ll be enjoying this often.

Time for an APPLE WEEK side dish! Kale is one food I never grow tired of, so I’m always looking for new ways to prepare it. I adapted today’s recipe from one I found on the back of a bag of kale months ago. The recipe lends itself so well to variation. I added a chopped Granny Smith apple along with the cranberries and it’s just perfect. You could always increase the amount of add-ins if desired, more apple, more cranberries, or top with chopped nuts after cooking. The combination of subtle sweetness and tang is addictive and SO HEALTHY! I hope this becomes a favorite at your house too.

Looking for a gourmet meal to make any time? Today’s APPLE WEEK recipe is table-ready in 20 minutes! Apples play a supporting role here, but what a part they play. The pork is prepared simply, panko-coated and pan-fried. It’s quick and absolutely stupendous, not to mention low in sodium. But the sauce is what makes this main course truly memorable. The flavors of apple and pork meld so fluidly, add the bite of sour cream and rev of horseradish and it’s OUT OF THIS WORLD.
When I made this yesterday, my younger daughter (and the dog, of course) hovered close by, just waiting for the green light to dig in.

Note the already full mouth of my child, begging for more. Needless to say, there weren’t any leftovers.

Sweetser’s is a wonderful family owned and operated orchard here in southern Maine. We stopped by last weekend and in addition to the best cider ever, picked up today’s recipe. These apple-walnut brownies are heavenly on their own, but served warm with a scoop of ice cream, they are DIVINE. Dense and ultra moist, chewy with a crispy sugar-coated crust, they’re autumn in a cookie bar.

My friend, Natalie, is celebrating her 10th wedding anniversary in Ireland. Along with touring the countryside, sightseeing and sampling pints, Nat and her husband have been investigating local shops, including grocery stores. Now, I don’t know about you, but I could spend an entire vacation bouncing from one foreign supermarket to the next. The products, the packaging, the potential LOW SODIUM BONANZA! Unfortunately, Meniere’s disease makes travel for me very difficult. Thankfully Nat has been posting her photos online, so it’s been a sort of virtual vacation for me too.
Her trip has inspired me to pick up a few European treasures this week. There are local stores – yes, right here in Portland, that can transport my taste buds thousands of miles away (and for a fraction of the cost!) Here are 3 favorite spreads – all of them low sodium and absolutely delicious. (And a great mini-vacation anytime.)
