Super Yummy Meatless Meatloaf (Low Sodium & Vegan, too!)

One of my new year’s resolutions is to reduce the amount of meat my family & I are consuming. To further this goal I’ve committed to Meatless Monday for the duration of 2012. I hope you’ll join me!

Today you’re in for a TREAT. This is one of my favorite meat-free main courses; certain to please die-hard meat eaters and vegetarians alike. The premise is simple. Boil three potatoes and mash, along with a can of salt-free kidney beans. Add some sauteed onion, garlic and bell pepper. Season with tangy ketchup, BBQ sauce and mustard (all salt-free of course), stir in oats for heft, then pop in the oven and bake. Before it’s done, top with extra sauce and a sprinkling of cheese. The result is gooey, moist, melt-in-your-mouth comfort food. Pure deliciousness with absolutely no guilt!

The basic recipe makes for easy adaptation. Try salt-free salsa instead ketchup or BBQ sauce, add different vegetables and herbs (like corn, jalapenos and fresh cilantro), or just use what you have on hand. If you can’t find salt-free condiments locally, order online from Healthy Heart Market.

Low Sodium Meyer Lemon Vinaigrette

A week before Christmas, I was at my local grocery store when I came upon a small sack of Meyer Lemons.  In my (almost) three years here in Portland, this was the first time I’d seen Meyer Lemons, let alone held one in my hand. I was so incredibly excited I started squealing, right there in the produce aisle! If you’ve never had a Meyer Lemon before, you don’t know what you’re missing. To lemon-lovers they are perfection. And for someone on a low-sodium diet, Meyer Lemons are GOLD.

Meyer Lemon season runs now through April. Until they’re gone, I’ll be savoring their tart sweetness every chance I get, daily if possible, and especially in this vinaigrette.  This dressing is just so good, and so incredibly low in sodium, you may want to skip the salad and simply lick your bowl.  My husband and I pour extra onto our plates when the greens are gone, and sop up the vinaigrette with bread or our fingers. I’m serious when I say it’s one of the best recipes EVER.

NOTE: If fat & calories are a concern, reduce the amount of oil in the recipe. Start with 1/2 cup and work from there, adding additional oil if desired. (With 1/2 cup oil, there are 100 calories per 2 T. serving and 9 g fat.)

Low-Sodium Meatless Monday!

One of my new year’s resolutions is to reduce the amount of meat my family & I are consuming. At present, roughly half of my family’s meals are vegetarian. In an effort to “up the ante” a bit more, I’m committing to Meatless Monday for the duration of 2012. Each week I’ll be posting a new & delicious low-sodium meat-free main course (i.e., whatever my family & I will be eating Monday night for dinner).

Easy ways to reduce sodium in your diet.

Salt is one of those sneaky substances.  Unless you’re watching how much of it you’re consuming, and I mean WATCHING – as in counting milligrams, you’d never guess how much is in most “normal” foods.

Take for instance a hamburger.  One 4 oz. beef patty contains 75 mg of sodium.  Sandwich that meat in a bun (200 mg sodium).  Squirt on some ketchup (160 mg), mustard (75 mg) and a little pickle relish (120 mg).  Now add some good ole American cheese (300 mg).

That burger with a single slice of cheese, bun & condiments contains over 900 milligrams of sodium!

Whether you’re on a strict salt-free diet or simply looking to reduce your sodium intake, there are many ways to skirt extra salt with easy substitutions. The health & fitness website Greatist just compiled a must-read list of 21 Lower-Sodium Solutions. Here are some of my favorites.

Low Sodium Spotlight: Johanna Chong

Happy New Year, everyone!  Let’s kick 2012 off right with a new & invigorating Low Sodium Spotlight!

Today’s special guest, Johanna Chong, is co-founder of the fabulous Low Sodium Blog.  Johanna and her husband, Jeff, launched the site last spring in order to share their base of low-sodium knowledge with the world.  A feast for the senses in every sense, with inspiring photography, tempting recipes, travel tips & more, Low Sodium Blog offers worlds of flavor for those on a salt-free diet. 

Johanna, first things first. Why a low sodium diet?!

Unlike many of the other low sodium champions, I’m a “voluntary” low-sodium convert – a care-giving family member and not the diagnosis recipient. This December marked the 4th anniversary of my husband’s diagnosis of coronary artery disease and emergency stent; in May, my mother will be celebrating her 4th year (live-donation from her sister) kidney transplant anniversary. Initially, only our family members who adopted low sodium diets related to their health-related diagnoses did so.

The reality of trying to juggle a busy life and trying to cook multiple variations (“regular” vs “low sodium”) of the same dish quickly became overwhelming. Over the years, I’ve moved my pallet and recipes into the “low-sodium spectrum,” converting one dish at a time.

Hershey’s Chocolate Candy Cane Cookies

Welcome to The Daily Dish 3rd Annual Holiday Bake-Off!

Hershey’s Candy Cane Kisses. I hadn’t heard of them before this year’s bake-off, but judging from reader response I’d say they’re POPULAR. Not only did I receive multiple recipes with them, but when I went to pick some up I had to scour multiple stores to find just ONE LONE BAG.

One taste and I understood. These seasonal kisses are scrumptious! Loaded with peppermint flavor, they melt in your mouth – and in the case of these cookies, also on your hands, into the cookies, and so on. Rather than pick a single winner, I’ve decided to send prizes to all “candy cane” entrants – so congrats! You know who you are. LOL. Today’s recipe was adapted from Hershey’s Recipe Collection.
