Tuna Pasta Salad with Broccoli and Sundried Tomatoes

My husband requested pasta today and I of course wanted to oblige.. But with the weather so oppressive of late, I wasn’t in the mood for something heavy. So I came up with this beautiful pasta salad instead. Although my younger daughter groaned when I added the tuna, one taste and she couldn’t keep her hands out of the bowl. Me neither; it is delicious.

Serves 8.

INGREDIENTS

1 lb. cooked ziti
1 c. sundried tomatoes, drained
2 c. hot water
5 c. fresh broccoli florets
2 6.5-oz. cans no-salt-added solid white tuna, drained (available in many supermarkets nationwide and online at healthyheartmarket.com)
1 shallot, finely diced
4 T. olive oil
4 T. balsamic vinegar
1 t. freshly ground black pepper

DIRECTIONS

Place sundried tomatoes in a bowl, add hot water and soak 15-20 minutes. Drain water and chop tomatoes roughly. Combine ziti, tomatoes, broccoli, tuna and shallot in a very large bowl and stir to combine. Add oil, vinegar and pepper and mix well. Serve immediately or store in an airtight container and refrigerate until serving. Tastes great warm or cool.
