Salt-Free Snack Mix

THAT’S RIGHT FOLKS! It’s the party mix you’ve been waiting for! Every bit as tasty as its commercial counterparts, this salt-free version will please even your pickiest friends. Recipe courtesy of Better Homes and Gardens Low-Salt Cooking.
Yields 10 cups.



SODIUM CONTENT: 36 mg per cup

INGREDIENTS

4 c. bite-size shredded wheat biscuits
2 c. unsalted peanuts
1/2 c. vegetable oil
1/8 t. Tabasco or other low-sodium hot sauce
1/4 c. grated Parmesan cheese
2 t. salt-free chili powder
1/2 t. garlic powder
4 c. unsalted pretzels

DIRECTIONS

Preheat oven to 300 degrees. In a large mixing bowl, combine the shredded wheat biscuits and peanuts. Stir together the oil and hot sauce; drizzle over cereal mixture and toss well to coat. Stir together Parmesan cheese, chili and garlic powders; sprinkle over cereal mixture and toss to coat. Spread mixture onto a roasting pan or baking sheet, place on middle rack in oven and bake 10 minutes. Remove from oven and carefully stir. Return to oven and bake another 10 minutes. Remove from oven, stir in pretzels and return to oven once more. Bake 10 minutes, then remove from oven and place pan on wire rack to cool. Serve immediately or store in an airtight container until serving.
