Mushrooms with White Wine and Shallots

This delicious side is a particularly tasty showcase for cremini (aka Baby Bella) mushrooms. The recipe comes from The New American Heart Association Cookbook.

Serves 4.



SODIUM CONTENT: 46 mg per serving

INGREDIENTS

2 T. unsalted butter
1/2 c. finely chopped or sliced shallots
1 lb. medium mushrooms (button or cremini), quartered
1/2 c. dry white wine
1 T. finely chopped fresh parsley
freshly ground black pepper, to taste

DIRECTIONS

In a large non-stick skillet or saute pan, melt butter over medium-high heat. Swirl to coat the bottom. Add the chopped shallot and cook, stirring, 2-3 minutes. Add the mushrooms and wine. Reduce the heat to medium and cook, covered, 7-9 minutes. Uncover the pan. Increase the heat to high and cook 5-6 minutes, until the juices have evaporated. Remove from heat, stir in the parsley and ground pepper to taste. Serve immediately.
