Maple Brown Sugar Granola

Though sellers at farmer’s markets across the country don’t want you to know this, GRANOLA is super easy to make and doesn’t need to cost 5 bucks a bag. And there are endless variations on the theme for those of us who bore easily. Though it might look complicated, it’s just because of all the little bits and pieces. Don’t be intimidated! Here’s a basic salt free granola that’s sure to please. Tasty, simple to prepare and keeps for weeks. Try adding some chopped nuts, coconut or unsalted sunflower seeds before baking. Or after baking stir in your choice of dried fruit. With granola, the possibilities are endless.

Yields 9 cups.



SODIUM CONTENT: 4 mg per cup

INGREDIENTS

6 c. old-fashioned rolled oats (NOT quick or instant), uncooked
1/4 c. wheat germ
1/2 c. brown sugar
1/2 c. real maple syrup
1/4 c. vegetable oil
1 t. pure vanilla extract

DIRECTIONS

Preheat oven to 300 degrees.

Measure all ingredients into a large mixing bowl and stir until mixture is thoroughly combined. Wipe the bottom of a large baking sheet lightly with vegetable oil. Spread granola evenly across the sheet. Place on middle rack in oven and bake 45 minutes, stirring slightly every 10 minutes. Remove from oven and allow to cool – the granola will get crunchier as it loses heat. Store in an airtight container. Keeps well for several weeks in cupboard and almost indefinitely in refrigerator.
