Apple Fritters

I thought it’d be fitting to end APPLE WEEK on a sweet note, especially since today is my younger daughter’s birthday. To fritter away one’s time is a bad thing, but these Apple Fritters are nothing but GOOD. True, they are fried, but olive oil contains 73% monounsaturated fat = HEALTHY! Because of the frying and powdered sugar, these remind me of a fair ground treat — like mini apple funnel cakes without the ticket price. A super easy recipe you can whip up on the spur of the moment, or on a very special day, like today. HAPPY BIRTHDAY, GEORGIA!! Recipe adapted from The Mediterranean Heart Diet.

Yields 20 fritters.

SODIUM CONTENT: 13 mg per fritter

INGREDIENTS:

1 1/4 c. flour
2 T. sugar
1 t. Featherweight sodium free baking powder
1 c. low fat milk
1 T. extra light olive oil
1 t. pure vanilla extract
2 egg whites
3 apples, peeled, cored and chopped
4 (plus) T. extra light olive oil (for frying)
1/4 c. powdered sugar, if desired

DIRECTIONS:

Combine flour, sugar and baking powder in a large mixing bowl, then whisk to combine. Stir in the milk, oil and vanilla. In another bowl, beat the egg whites until stiff. Gently fold the egg whites into the batter, then gently stir in the chopped apples.

In a large skillet, heat the 4 T. oil over medium heat. For each fritter, carefully spoon about 2 T. batter into the oil. When edges begin to brown, turn and cook other side.

When both sides are golden brown, remove from pan and drain on paper towels. Cover and keep warm.

Continue cooking remaining batter, adding more oil and adjusting heat as necessary. Sprinkle fritters with sifted powdered sugar, if desired. Fritters are also delicious served with fruit preserves or syrup.
