Red Wine Vinaigrette

Although I often dress my salads with balsamic, a lighter red wine vinegar makes a nice change of pace. This deliciously simple recipe yields enough vinaigrette for a large 4-person salad.
Serves 4.



SODIUM CONTENT: scant trace per serving

INGREDIENTS

1/3 c. extra virgin olive oil
1/4 c. red wine vinegar
1/2 t. minced garlic (1 small clove)
1 t. ground mustard
1/2 t. dried marjoram
1/2 t. freshly ground black pepper

DIRECTIONS

Measure all of the ingredients into a small mixing bowl and whisk well to combine. Pour over salad and toss well to coat. Serve immediately.
