Mashed Sweets

A nice change from standard savory mashed potatoes, these mashed sweets turn a simple chicken dinner into something special.
Serves 4.

INGREDIENTS

6 c. diced sweet potato (5-6 med/lg sweet potatoes, peeled and diced)
3 T. unsalted butter
3 T. brown sugar
1/2 t. ground cinnamon
1/4 t. pure orange extract

DIRECTIONS

Place the diced sweet potatoes into a large pot and add enough water to cover. Bring to a boil over high heat and continue boiling about 30 minutes, until potatoes are fork tender. Remove from heat and drain. Mash the potatoes, then add the remaining ingredients to the pot and stir gently to combine. Serve immediately.
