Turkey Noodle Soup

Post-Turkey Day turkey soup is a tradition in my family. The ultimate in comfort food, the essence of simplicity – it’s like a little bowl of heaven. And just because I’m on a low sodium diet now doesn’t mean I’m gonna let THAT spoil this treat. See for yourself. Salt free can be delicious!!

Serves 8.

SODIUM CONTENT: 124 mg per serving

INGREDIENTS

1 recipe Homemade Turkey Broth (9 cups) or equivalent low sodium chicken broth
2 1/2 c. diced turkey
1 c. diced carrot (1 large carrot)
1 c. diced celery (2-3 stalks)
1 c. diced onion (1 medium onion)
6 garlic cloves, minced
8 oz. (1/2 pkg.) extra wide egg noodles
1/2 t. Bell’s all natural salt free seasoning (available in supermarkets nationwide and online)
1/4 t. freshly ground black pepper

DIRECTIONS

Pour broth into a stockpot and bring to a boil over high heat. Once boiling, add remaining ingredients and return to a boil. Once boiling, reduce heat to medium and simmer uncovered 20 minutes, stirring occasionally. Serve immediately.
