Swiss chard reminds me of cooked spinach and is (in my humble opinion) much prettier in terms of looks. This makes an interesting and highly nutritious side, perfect for those who enjoy their spice. If you’re someone who doesn’t, simply reduce or omit the pepper. (Wuss.) 😉

INGREDIENTS
1 T. olive oil
2 cloves garlic, slivered finely
1 bunch fresh Swiss chard
1/2 t. freshly ground black pepper
1/4 t. crushed red pepper flakes
DIRECTIONS
Wash the Swiss chard well, then pat dry. Trim each piece by removing most of the stalk, leaving just an inch or two of stalk beneath each leafy portion. Cut the chard into (approx) 2-inch pieces and set aside. Heat oil in a saute pan over medium-high. Add slivered garlic and saute 1 minute. Add swiss chard, pepper and pepper flakes and saute 3 minutes. Remove from heat and serve immediately.
