I created this recipe especially for my daughters, who love those flavored instant oatmeal packets you can buy at the store. And indeed they are delicious, and may seem healthy, but check the side of the box and you’ll find they’re laden with sodium. UGH. Fortunately, we’re not missing them anymore! This recipe produces a creamy oatmeal every bit as delicious as those instant packets, but without the high sodium and artificial additives. And it’s every bit as QUICK! 5 minutes from start to finish and breakfast is done. A win-win you’re sure to love as much as we do. MMMMMmmm.

INGREDIENTS
2 c. low fat milk
1/2 T. pure vanilla extract
1 1/3 c. quick rolled oats
1/4 c. packed brown sugar
1/2 t. ground cinnamon
DIRECTIONS
Measure the milk and vanilla into a medium saucepan and bring to a boil over medium-high heat. Once boiling, reduce heat to medium, stir in oats, brown sugar and cinnamon and cook, stirring, 2-3 minutes. Serve immediately, sprinkled with additional cinnamon if desired.
