A fabulous low sodium cookie recipe from my fabulous Aunt Sherill!!
Yields 6 dozen.
INGREDIENTS
1 c. (2 sticks) unsalted butter, softened
1 1/4 c. brown sugar, firmly packed
1/2 c. sugar
2 t. pure vanilla extract
2 eggs
2 T. milk
1 3/4 c. all-purpose flour
2 t. Ener-G sodium free baking soda (sold online at healthyheartmarket.com)
1 t. ground cinnamon
2 1/2 c. uncooked old-fashioned rolled oats
1 c. chocolate chips (preferably milk chocolate)
1 c. seedless raisins
1 c. chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees.
Beat together sugars, butter, and vanilla until creamy. Add eggs and milk and beat well. Combine flour, baking soda and cinnamon, and mix into butter mixture just until blended. Stir in oats, chips, nuts and raisins.
Drop by rounded teaspoonfuls onto cookie sheets. Place on middle rack in oven and bake for 15 minutes. Remove from oven and cool slightly before storing in an airtight container.
