Banana Bars

These dense cake like bars are the perfect pick-me-up any time of the day. Ultra moist and satisfying, salt free and packed with great banana flavor.

Yields 32 bars.

INGREDIENTS

1/2 c. (1 stick) unsalted butter, softened
1/2 c. brown sugar
3/4 c. sugar
2 t. pure vanilla extract
4 very ripe bananas, peeled and mashed
1/4 c. milk
2 eggs
2 t. Ener-G sodium-free baking soda
1 t. Featherweight sodium-free baking powder (sold at Whole Foods markets and online at healthyheartmarket.com)
1 3/4 c. all-purpose flour
1/2 c. natural unsweetened coconut
1/2 c. chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees. Grease and flour a 9 x 13-inch baking pan and set aside.

In a large mixing bowl, cream butter with sugars and vanilla. Add the mashed banana and milk, and stir well. Add the eggs, one at a time, beating well after each. Stir in the baking soda and baking powder. Gradually add in the flour, mixing well and scraping the sides of the bowl to incorporate. Last, stir in the coconut and chopped walnuts. Spread the batter evenly in the prepared pan. Place pan on middle rack in oven and bake about 45 minutes. Bars are done when tester inserted in center of pan comes clean. Remove pan from oven and place on wire rack to cool. Cool fully before cutting into bars and serving. Store any leftovers in an airtight container. These bars also freeze very well.
