Fiery Pineapple Salsa

Today’s dish is a fantastic fiery salsa, full of ripe fresh fruit and sizzling flavor.
Yields 6 cups.



SODIUM CONTENT: 4.8 mg per cup

INGREDIENTS

4 c. diced pineapple (about 1 fresh pineapple, peeled and cored)
3 T. minced jalapeno pepper (about 2 jalapenos)
1/2 T. minced garlic (about 2 cloves)
1/2 c. minced shallot (about 1 shallot)
3/4 c. diced green bell pepper (about 1 sm pepper)
1 c. diced red bell pepper (about 1 med pepper)
1 t. ground cumin
1 1/2 T. dried cilantro
1 T. apple cider vinegar
1/4 c. pineapple juice

DIRECTIONS

Measure all ingredients into a large mixing bowl and stir well to combine. Serve immediately or store in an airtight container and refrigerate until serving.
