Simple Autumn Salad

A tasty combination of red leaf lettuce, red onion and fruit in a light and tangy vinaigrette. Salt free, healthy & DELISH!

Serves 4.

INGREDIENTS

SALAD:
1 large head red leaf lettuce, washed, dried and torn into bite-size pieces
1 pear, cored and thinly sliced
1/2 small red onion, thinly sliced
1/2 c. dried black mission figs, trimmed and chopped
1/3 c. chopped walnuts

DRESSING:
1/8 c. white wine vinegar
1/8 c. vegetable oil
1 clove garlic, minced
1/4 t. freshly ground black pepper

DIRECTIONS

Place the salad ingredients into an extra large mixing bowl and set aside.

Measure the dressing ingredients into a small bowl or lidded jar and whisk or shake well to combine. Pour the dressing over the salad and toss well to coat. Serve immediately.
