Apple Butter

I have loved apple butter for as long as I can remember and I like it best when its homemade. Try my sweet and deliciously simple salt free recipe. It’s terrific on toast, but even better on pancakes.

Yields 6 cups.



SODIUM CONTENT: scant trace per serving

INGREDIENTS

12 c. chopped apples (about 10 med/large apples, cored and peeled)
4 c. apple juice
2 c. sugar
1 1/2 t. ground cinnamon
1/2 t. ground allspice
1/4 t. ground cloves

DIRECTIONS

Place all ingredients into a stockpot and stir to combine. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for 1 1/2 hours, stirring occasionally. Remove from heat and puree until smooth using an immersion blender, conventional blender or food processor. Spoon into clean lidded jars and refrigerate until serving. Makes a lovely gift.
