Apple Salsa

The perfect showcase for crisp, sweet fruit. This salsa makes a really unique and tasty dip for unsalted tortilla chips and also pairs wonderfully with grilled meat.
Yields 6 cups.



SODIUM CONTENT: 9.3 mg per cup

INGREDIENTS

3 c. diced or finely diced apple (about 3 medium apples, peeled and cored)
1 t. freshly squeezed lemon juice
1 c. finely diced green bell pepper (1/2 lg. pepper)
1/2 c. diced onion (1 small onion)
2 t. minced garlic (2-3 cloves)
1 fresh jalapeno pepper, minced
3 c. diced fresh tomato (about 3 medium tomatoes, peeled, cored and seeded)
2 T. chopped fresh cilantro
1 T. apple cider vinegar
1 T. apple juice
1/2 t. ground cumin
1/8 t. ground cinnamon

DIRECTIONS

Place diced apples in a large mixing bowl, add lemon juice and toss well to coat. Add the remaining ingredients and mix well. Serve immediately or store in an airtight container and refrigerate until serving.
