My husband and I adore this simple side which takes just a minute to prepare and is gone in a flash. I can’t say it’s the most creative recipe I’ve ever concocted, but to me it’s perfect.
Serves 2.
SODIUM CONTENT: 74.5 mg per serving
INGREDIENTS
1 T. olive oil
6 c. fresh baby spinach, washed well
1 large shallot, minced
2 cloves garlic, minced
DIRECTIONS
Heat oil in a saute pan over medium to medium-high heat. Add the shallot and garlic and saute 3 minutes. Add the spinach and saute just until wilted. Serve immediately.
