Homemade Granola Bars

These soft & chewy granola bars make a super healthy change from their commercial counterparts. Not only are they completely FAT FREE, but they’re also virtually sodium free as well. Perfect for a quick energy boost, or a guilt-free go-to snack anytime. Recipe adapted from the WomenHeart’s ALL HEART Family Cookbook.
Yields 20 bars.



SODIUM CONTENT: 2 mg per bar

INGREDIENTS

3 c. quick-cooking oats
1 c. whole wheat flour, sifted
2 t. Ener-G sodium-free baking soda (available online at healthyheartmarket.com)
1/2 t. ground cinnamon
1/4 t. ground nutmeg
1 1/2 c. natural unsweetened applesauce
1 c. sugar
1 t. pure vanilla extract
2/3 c. dried cranberries or cherries

DIRECTIONS

Preheat oven to 350 degrees. Lightly oil two 8- or 9-inch square baking pans and set aside.

In a large bowl, combine the oats, flour, baking soda, cinnamon and nutmeg. Add the applesauce, sugar and vanilla and stir well until combined. Add the dried cranberries or cherries and mix well. Divide the mixture between the two prepared pans, then smooth top of each. Place pans on the middle rack in oven and bake 20 minutes. Remove from oven and place on wire rack to cool briefly before cutting each pan into 10 equal-size bars. Carefully remove bars from pans and place on wire rack to cool. Serve immediately, store in an airtight container, or wrap individually and freeze.
