Tuna and White Bean Salad

As promised, today’s recipe showcases every delicious bite of Oregon’s Choice No Salt Added Albacore. I recommend sharing this salad with friends. Not only is it beautiful, but the incredible range of flavors is so impressive, it’ll make a low sodium fan of them all! Recipe from The Mediterranean Heart Diet.

Serves 8.

SODIUM CONTENT: 50 mg per serving

INGREDIENTS

Salad:
1- 15 oz. can no salt added cannellini beans, drained and rinsed
1- 6 oz. can no salt added tuna, drained
1 c. diced green bell pepper
1/2 medium red onion, diced
2 medium celery stalks, diced
1 large tomato, diced
1 T. chopped olives
1/2 c. Italian Dressing (recipe below)

Italian Dressing:
1/2 c. olive oil
2 T. apple cider vinegar
2 T. freshly squeezed lemon juice
1 T. no salt added tomato sauce
1 scallion, thinly sliced
1 garlic clove, minced
1/2 t. dried oregano
1/2 t. dry ground mustard

DIRECTIONS

In a large bowl, gently toss all of the salad ingredients together. Set aside. Measure the dressing ingredients into a small mixing bowl and whisk briskly to combine. Measure out half of the dressing (the recipe yields about 1 c.), pour over the salad and toss to coat.

Cover and chill until serving. Salad tastes best when allowed to marinate an hour or more before serving.
