What could be better on a hot day than an ice cold dessert – and not just spooned into a bowl like an afterthought, but given center stage like it deserves! All you need is a watermelon for the “cake” and an assortment of fresh fruit to fancy it up. It’s so easy! Not to mention beautiful, creative, low in sodium and calories, fat-free, cholesterol-free, and chock full of vitamins and nutrients! Eat seconds, thirds, heck – eat the whole honking thing yourself. No worries!
Many thanks to Engine 2 Diet for the wonderful idea and to my daughters for their decorating skills.
Happy 4th of July weekend, everyone!

This is amazing! Certainly the healthiest cake ever! Very creative … and 3-tiered even
Definitely no guilt there!
Thank you, Ping!! But between Engine 2′s idea, my daughters’ execution, and nature so kindly providing the bounty, credit belongs elsewhere. (Though I was more than happy to partake!)
I hope your family had a WONDERFUL holiday, Dishy!
Love that creative and delicious looking cake, of course!
We had a fabulous weekend, Inky! Just catching up now (it’s slow going…)
Hope you had an awesome holiday, too!
And then you could pour a boxed cake batter into the scooped-out watermelon rind and make a real cake! Or just forget the cake altogether and put a can of icing into the empty rind!
No?
NOOOOOOO!!
I absolutely LOVE this cake, Christy. Glad I stopped by to see what you’re up to. I checked out the link you provided and love those ideas too. And congrats on your other book! Have a great day!
Thanks so much, Linda!! So glad you stopped by too. Wishing you all the best!
I made a version of your cake on my blog and linked to this article.
Thanks for letting me know, Melanie! GREAT JOB!
